PURPOSE:To apply this process not only to polished rice but also to unpolished rice, by absorbing water in rice sufficiently, heating it to a specific temperature, irradiating it with microwave for a time to gelatinize starch, putting it in a container. CONSTITUTION:About twice as much water as unpolished rice by weight is absorbed in the unpolished rice, and about 1.5 time as much water as polished rice is adsorbed in the polished rice. In order to shorten the water absorption time, the operation is carried out under heating, when unpolished rice is used, a given amount of water can be absorbed at 90 deg.C for about 1hr, or at 120 deg.C for several minutes, and when polished rice is used, water is absorbed in a shorter time. In microwave irradiation, after the rice is heated to 100 deg.C, preferably to 105 deg.C, the rice is irradiated for a time to gelatinize starch, usually for several minutes - about 20min. The prepared irradiated rice is sealed in a heat-resistant plastic container, etc., and, if necessary, irradiated with microwave, sterilized, and preserved. |
