PURPOSE:To provide a nut-containing mayonnaise having unique taste and flavor originated from the taste and flavor of ordinary mayonnaise in combination with those of nuts, by adding chopped nuts to mayonnaise having ordinary composition. CONSTITUTION:The objective mayonnaise is obtained by mixing mayonnaise having ordinary composition uniformly with one or more chopped nuts selected from almond, cashew nut, peanut, hazel nut and walnut having particle size of about 6-20 mesh, or with said nuts and powder of the nuts and/or nut flavor. Whe the chopped nut is used singly, its amount is about 2-12wt%, and when it is used in combination with nut powder, the amount of chopped nut is about 1-10wt%, and the ratio of the powder to the chopped nut is about 0.25-1. In the case of using nut flavor, its amount is about 0.01-0.5wt% based on the final product. The nut and nut powder is preferably coated with oil or fat prior to mixing. |
