PURPOSE:To obtain a large-sized block of meat having excellent deliciousness and softness comparable to beef, etc., by forming small-sized meat blocks of e.g. chicken to a large-sized block, drying the block, and immersing in a seasoning liquid. CONSTITUTION:Small-sized blocks of raw meat 1a of, e.g. chicken, etc. are arranged and pressed with a press 4 to obtain a large-sized flat meat 1b, which is dried by the drying device 5. The dried flat meat 1c is pressed with the press rolls 6, and the dried and pressed meat 1d is immersed in the seasoning liquid 7 to obtain the product 1e. The meat of chicken or hare which is cheaper than beef and pork can be utilized in the form of a large-sized meat such as beefsteak meat by this process, and the obtained meat is soft and delicious. |
