1302289 Freeze-dried coffee GENERAL FOODS CORP 31 July 1970 [1 Aug 1969 8 Sept 1969 21 Oct 1969] 37229/70 Heading A2B An aqueous coffee extract is freeze concentrated to 30-50 wt % coffee solids under conditions which provide large and uniform ice crystals such that an ice cake of high permeability is obtained, and said concentrated extract is formed, together with gas and frozen particles of coffee extract, into a foam slurry of controlled consistency, at a temperature of -2‹C to -7‹C, which is thereafter frozen and freeze-dried, preferably with prior granulation of the frozen foam slurry, the fines from the granulation providing the frozen particles of coffee extract for the preparation of the foam slurry. An apparatus comprises a freeze concentration device forming large ice crystals, a foaming system for coffe extract, a freezer for the foam, and a freeze dryer, there being a source of frozen coffee extract particles provided at the foaming system, for example a granulator after the freezer with a recycle device to the foaming system for fines. |
