PURPOSE:To deodorize a large amount of fish meat easily and economically, by immersing continuously the fish meat in salt waters having difference of concentration. CONSTITUTION:Meat, fillet, or slice of fresh fishes is immersed continuously in salt waters having difference of concentration alone or solutions of salt water and an acid or alkali in a short time. For example, the fish meat is immersed in 5 times as much 14-18wt% highly concentrated cold salt water as it so that salt is penetrated into the inside of the fish meat, the fish meat is then immersed in about 15 times as much flowing cold water so that fish smell together with fats and oils of the meat contained in the fish meat is separated by salting-out, dissovled in the flowing water, diffused, and removed. The fish meat is then immersed in about 5 times as much 4-8wt% middle concentrated salt water as it, and treated with about 15 times as much flowing cold water as it and dehydrated. |
