PURPOSE:To obtain delicious noodle, by immersing fresh or dried noodle in water for a definite time interval, draining the swollen noodle with a bamboo basket, etc., boiling in water, and treating the boiled noodle to conventional process to sale or serve. CONSTITUTION:Fresh noodle or dried noodle is immersed in water for a definite time interval (refer to the table), drained with a bamboo basket, etc. thrown into boiling water, and boiled for a definite time interval. Thereafter, same as the conventional process, the boiled noodle is washed with cold water, drained, packed with a plastic bag, etc. and sold as a boiled noodle, or the boiled noodle is served as it is or after boiling. The dry smell, the powdery smell and the astringent taste of the noodle can be eliminated by the process, and a delicious noodle having excellent taste, flavor, and feeling to the tooth, can be obtained. |
