PURPOSE:To obtain fats and oils having sweetness preserved stably in fats and oils, by suspending alpha-L-aspartyl-L-phenylalaninemethyl ester in a constant fine particle state in fats and oils, or making it into a solution or slurry and homogenizing with fats and oils. CONSTITUTION:alpha-L-Aspartylphenylalaninemethyl ester which is wholly or partially in fine particle state of <=100mu particle diameter is directly blended with a proper amount of fats and oils or it is pulverized and suspended in fats and oils. Or, alpha-L-aspartyl-L-phenylalaninemethyl ester and a solvent such as water, an alcohol, etc. are processed into a solution or slurry. The solution or slurry is blended with fats and oils in the presence of an emulsifying agent, homogenized, the solvent is removed under reduced pressure under heating, to give dipeptide sweetener-containing fats and oils. |
