PURPOSE:To prepare a roast rice which has excellent taste and flavor, and can be softened in a short time, by using glutinous rice with hull harvested early after 20-25 days from heading. CONSTITUTION:Glutinous rice with hull harvested early, i.e. 20-25 days after heading for early maturing variety or 20-27 days for late maturing variety is immersed in water at about 25 deg.C for 24hr to effect the sufficient absorption of water. The rice is then drained, steamed and parched. After cooling the parched rice, it is treated with a husker to separate the glutinous rice grain from the hull. The rice is polished, removed from the hull by a winnower, and the polishing and winnowing procedures are repeated at least twice. The obtained glutinous rice is rolled with a rolling machine, and quenched quickly with a large amount of chilled air. |
