Production of a mixture of acetone and butanol by fermentation of a juice from hydrolysis of Jerusalem artichoke. The hydrolysis is performed in acidic medium and interrupted when the relative content of trimeric sugars, in relation to total sugars, has fallen below 3 %, but before the relative content of dimeric sugars has fallen below 14 %. The figure shows the chromatogram obtained with a juice from a pressing of Jerusalem artichoke tubers; the peaks DP1, DP2, DP3, DP4 and DP5 correspond to the monomers and to the oligomers with a degree of polymerisation of 2, 3, 4 and 5 respectively. <IMAGE>
