Choline base is prepared by the electrolysis of choline chloride in electrolytic cells (13) having the anode (11) and cathode (12) separated by a cation exchange membrane (17). Color stabilization of choline base is effected through concentration control and/or the addition of a sulfite prior to electrolytic manufacture of the choline base.
