PURPOSE:To provide a modified stevioside having mild sweetness and free from bitter taste and unagreeable taste, by adding a vegetable polysaccharide having beta-1,4 (or beta-1,3) bond to stevioside using an enzymatic reaction. CONSTITUTION:An aqueous solution containing (A) stevioside (or a mixture of stevioside, dulcoside A, rebaudioside A, etc.) and (B) a vegetable polysaccharide having beta-1,4 (or beta-1,3) bond (e.g., ''glyloid 3S, 3A, C-102'', products of DAINIPPON SEIYAKU KK) is mixed with microorganisms having beta-1,4 (or beta-1, 3) glucosyl-transfer activity (e.g. Aspergillus niger) or an enzyme having the above transfer activity (e.g. Cellulase ''Onozuka'', product of Kinki Yakurt KK), and the components are made to react with each other to effect the addition of the glucose, xylose, galactose, etc. of the vegetable polysaccharide to the stevioside, and obtain the objective modified stevioside. |
