PURPOSE:To obtain optical active dihydrooxophorone in high yield useful as a flavor imparter for tobacco, by adding oxophorone to a culture solution of a bacterium belonging to the genus Thermomonospora, cultivating it to give a culture, separating and collecting the titled substance from the culture. CONSTITUTION:A spore of a bacterium (e.g., Thermomonospora curvata IFO 12384, Thermomonospora fusca ATCC27730) selected from bacteria belonging to the genus Thermonospora is inoculated into a liquid medium containing an infusion of swine liver, and cultivated at about 48-53 deg.C by shaking culture or aerated spinner culture. Oxophorone is added to it at the early stage of logarithmic propagation period of growth of mold, it is continuously cultivated at about 48-53 deg.C, so that oxophorone is converted into optical active hydrooxophorone. After the cultivation is over, the culture is subjected to extraction with an organic solvent in combination with adsorption chromatography, etc., separated and purified, to give dihydrooxophorone shown by the formula. |
