Prodn. of D-glucosone (I) comprises converting at least 95% of the glucose (II) in an aq. soln. by enzymatic oxidn. with a cell-free enzyme while removing or H2O2 by-prod.. Pref. the enzyme used is glucose-2-oxidase from Aspergillus oryzae or pyranose-2-oxidase from Polyporus obtusus, and is pref. used in immobilised form. The H2O2 formed is esp. decomposed with catalase. - (I) is useful as an intermediate for D-fructose (by catalytic hydrogenation) or 2-keto-D-gulonic acid (treatment with flucose-1-oxidase). This process obviates the need to separate residual (II) from the (I) syrup prod. (0/0)
|
