PURPOSE:Boiled fish paste capable of keeping elasticity, crispness, pliability, etc., for a long period, by thinly cutting flesh of soft bamboo sprout into a finely columnar state, adding it to kneading process in boiled fish paste production and absorbing water in the bamboo sprout in boiling or steaming process. CONSTITUTION:A raw material for boiled fish paste, such as walleye pollack, croaker, etc., is ground down and kneaded. In the operation, flesh of soft bamboo sprout is thinly cut into a fine columnar state, harshness of characteristic bamboo sprout is removed directly as it is or by boiling or steaming and the bamboo sprout is added to kneading process. Then, the blend is boiled or steamed, water is absorbed in the bamboo sprout in the boiling or steaming process so water is added to the boiled fish paste component. Consequently, water of boiled fish paste can be kept by using water retention power and the fault of boiled fish paste losing water with time cab be improved. The soft part of the bamboo sprout is thinly cut into 1mm fibrous state in the longitudinal direction and suitably used. |
