<p>A membrane skinning machine comprising a frame a conveyor mounted thereon, and gripping roll rotatably mounted across one end of the conveyor to receive the product to be skinned. A concave shoe with a cutting blade is mounted generally concentrically with the gripping roll. A skin stripper roll is mounted on the frame adjacent the gripper roll.
