PURPOSE:To prepare glutathione in high yield, by culturing a glutathione-producing yeast in a medium having controlled ethanol concentration. CONSTITUTION:A glutathione-producing yeast such as Saccharomyces cerevisiae TRZ-6 (FERM-P No.6214), is cultured in a medium controlling the ethanol concentration to 0.5-5% to accumulate glutathione in the yeast cell. In the above process, the culturing is carried out at a dilution ratio to attain the ethanol concentration of 0.5-5% in the culture liquid in the case of continuous cultivation, or controlling the feeding rate of saccharide so as to keep the ethanol concentration of 0.5-5% during the cultivation or feeding the saccharide so as to attain the peak concentration of generated ethanol of 0.5-5% during the cultivation in the case of semi-batch cultivation. |
