摘要 PURPOSE:To obtain the titled substance inexpensively, by blending a fixed amount of raw material tea with starch prepared from rice cake, alpha-amylase or a compounded enzyme consisting of alpha-amylase and another enzyme, and water, extracting components of tea at a constant temperature, drying the extracted solution, powdering it. CONSTITUTION:100pts.wt. raw material tea consisting of any kind of tea such as green tea, toasted tea, oolong tea, etc. is blended with 30-90pts.wt. starch prepared from rice cake, whose components mainly consist of amylopectin, 0.01- 0.2pts.wt. alpha-amylase or compounded enzyme obtained by blending alpha-amylase with one or more selected from beta-amylase, cellulase, protease, etc. and 500- 2,000pts.wt. water. The mixture is kept at 60-95 deg.C for 15-90min, components of tea are extracted, the extraction residue is removed, the extracted solution is dried, and powdered, to give instant tea.
