PURPOSE:To obtain a salt substitute seasoning having a good flavor, by blending histidine hydrochloride or lysine hydrochloride with sodium inosinate, sodium quanylate, a sweetener, and sodium citrate. CONSTITUTION:10pts.wt. histidine hydrochloride or lysine hydrochloride or their mixture is blended with 3-7pts.wt. sodium inosinate, 5-20pts.wt. sodium quanylate, 0-200pts.wt. one or several sweeteners such as an amino acid type sweetener, e.g., glycine, etc. saccharide, e.g., sucrose, honey, stevia, licorice, extract, etc. as a sweetening component. and 0-7pts.wt. sodium citrate, to give a salt substitute seasoning. The sweetener and sodium citrate are added, if necessary. |
