The subject of the invention is an installation comprising a circuit 9 for generating hot air, a circuit 10 for taking up the drying air, means 13, 14 for mixing the hot air and the air taken up in adjustable metered proportions and introducing it into the horizontal sleeves 16, traversing the tunnel in the gaps between the conveyor belts 1, arranged in the central portion of the tunnel and equipped with openings directed towards the ends of the tunnel. The installation also comprises a circuit 19 to 23 for rejecting the drying air and introducing renewed new air. Application to the drying of fruits and vegetables, especially plums. <IMAGE>
