<p>PURPOSE:To prepare maltotriose in high yield, by reacting amylase G3 of the genus Bacillus with a starch, amylopectin, etc. in the presence of alpha-1,6-glucosidase. CONSTITUTION:A liquefied substance in 5-40% concentration obtained by liquefying a starch, amylopectin, glycogen or a derivative thereof is reacted with amylase G3 capable of producing maltotriose from the starch in the presence of alpha-1,6-glucosidase at 5.5-8 pH and 40-60 deg.C.</p> |
