摘要 PURPOSE:To obtain a fish-paste product having a taste of its own, having two kinds of hard and soft elasticity, by steaming a granulated raw material for fish meat or animal meat paste at high temperature, blending it with a raw material for fish meat paste, molding and heat-treating the blend. CONSTITUTION:A raw material for fish meat or animal meat paste is sent under pressure by a pump for transporting the raw material to a granular molding machine, molded under pressure into granules having a size of about rice grain, dropped into the belt conveyor set in a warm water bath, and transported under heating for a short time. The granules thus obtained, wherein only the surface is gelatinized so that the granules are prevented from swelling and from attaching themselves, are further transported by the belt conveyor to a steaming chamber, heated at 85-95 deg.C by steam, and completely gelatinized, to give a granular fish-paste product. The granular fish-paste product is blended with a raw material for fish meat paste, molded into an arbitrary shape, and the molded blend is steamed, boiled, roasted, or heat-treated by frying with an oil, etc. like a common fish-paste product, to give the desired fish-paste product.
