<p>PURPOSE:To prepare maltotriose in high yield, by reacting amylase G3 of the genus Bacillus with a starch, amylopectin, etc. CONSTITUTION:A starch, amylose, amylopectin, glycogen or a partial hydrolyzate thereof is liquefied with an acid or a liguefying enzyme to give a liguefied substance having <=20 liquefaction degree. The resultant liquefied substance is then reacted with amylase G3 of the genus Bacillus capable of producing maltotriose from the starch and 5X10<-4>-2X10<-2>M CaCl2 at 5-7 pH and 40-60 deg.C.</p> |
