PURPOSE:To obtain rebaudioside A having improved sweetness, and suitable for a sweetening agent, by reacting a specific microorganism belonging to the genus Streptomyces with an aqueous solution containing stevioside and a beta-1,3-glucosylsugar compound. CONSTITUTION:A microorganism, e.g. Streptomyces sp. DIC-108, of the genus Streptomyces having the ability to produce an enzyme having a beta-1,3-glucosylsugar rearranging activity between stevioside and a beta-1,3-glucosylsugar compound and convert stevioside which is a sweetening agent having the bitterness, and leaving an aftertaste into rebaudioside A having a mellow sweetness without the bitterness is prepared. An enzyme separated from a culture fluid, microbial cells, treated substance thereof or the microorganism is reacted with an aqueous solution containing the stevioside and beta-1,3-glucosylsugar compound to afford the aimed rebaudioside A. |
