Mould for the vacuum cooking of ham provided with a cover formed from two parts: a sliding part 1 resting on the meat by means of springs 5 and the actual cover 2 hermetically fitting to the outer edges of the mould characterised by a valve 7 allowing a vacuum to be produced inside, the air-tightness being ensured by a gasket 4. The arm 3 provided with hooks 8 serves as a support for a cam 6 or for springs 9 which lock the cover. The mould release valve being closed and the mould filled, the cover is put into position and locked. The vacuum valve being open, the air is extracted using a vacuum pump connected to this valve. Once the vacuum is produced, the valve is closed and the meat is cooked, the mould release being carried out by injecting air 10 through the lower valve. <IMAGE>
