PURPOSE:To prepare a fish paste product similar to matsudake mushroom in the texture and shape, in high efficiency, by coating a raw fish meat paste to a fish paste web having a number of parallel grooves, forming the web in the form of a rod, reshaping the rod in the form of a matsudake mushroom, and heating the product. CONSTITUTION:The apparatus 6 for the rolling and forming of web-like fish paste product A is placed after a pair of notched rolls 2, and the apparatus 6 is furnished with a raw fish paste application nozzle 7 above its inlet end and a cutter 9 at the outlet end. The apparatus 6 is followed by the lower mold transfer apparatus 14 composed of a pair of parallel transfer chains 11 and the mold 12 having the form of the stem of matsudake mushroom and attached between the chains 11, and the upper mold transfer apparatus 18 placed oppositely to the apparatus 14 and composed of a pair of parallel chains 15 shorter than the chain 11 and the upper mold 16 having the form of the cap of matsudake mushroom and fittable closely to the mold 12. Heating apparatuses 19 are placed opposite to the apparatuses 14 and 18. The present apparatus enables the automatic continuous preparation of a fish paste product having unique taste and similar to matsudake mushroom in texture and shape, in high efficiency, from a web-like fish paste. |
