PURPOSE:To prepare a fish paste product similar to matsudake mushroom in the texture and shape, easily, by forming the raw fish meat paste in the shape of the stem and cap of matsudake mushroom. CONSTITUTION:Raw fish meat paste mixed with salt, seasoning, egg white, starch, matsudake extract, etc. is formed to a web 1 having a number of parallel grooves. The web is coated with a raw fish meat paste 2 as a binder, and rolled to obtain a rod-like product 3. The lower half of the rod 3 is inserted into the stem part 5 of the top-opened mold 4 having the shape of matsudake mushroom, and the upper mold 6 is fitted to the opening of the mold 4 to collapse and spread the upper half of the rod 3 in the shape of the cap of matsudake mushroom. The formed paste is heated in the mold, and released from the upper mold 6 and the lower mold 4. A fish paste product having unique taste and similar to matsudake mushroom in texture and shape can be prepared easily by this process, which is expected to contribute the increase in the demand of fish paste products. |
