PURPOSE:To obtain noodles enriched with protein, fatty component, etc., having high nutritive value, by blending a powder ingredient comprising wheat flour as a main raw material with <= a given weight ratio of soybean milk or peanut milk or mixed milk of them, kneading, rolling and cutting it thinly by a conventional procedure. CONSTITUTION:A powder ingredient of wheat flour or obtained by mixing it with buckwheat flour is blended with soybean milk prepared by grinding soybeans to give boybean juice, squeezing and filtering it under pressure, or peanut milk, or mixed milk of them. The amount of the soybean milk or peanut milk is <=40wt% based on the powder ingredient. The blend is kneaded by a conventional procedure, the powder ingredient and the component contained in the kneaded solution are hydrated well, the rolled and extended noodle belt is cut, put in a synthetic resin film bag, and sterilized to give a product. |
