PURPOSE:To separate the oils from fish meat, completely, by exposing the collected fish meat to water, refining the meat with a refiner, mincing the meat, stirring in cold water, separating into solid and liquid, and dehydrating the solid component. CONSTITUTION:A fish body is washed with a fish-washer, and sent to the meat collector. The collected meat is exposed to water several times, refined with a refiner to small pieces, and minced with a crusher. The minced fish meat is put into the container of a mixer, poured with chilled water, and mixed sufficiently. The mixture is transferred to a decanter such as a horizontal centrifugal separator to effect the solid-liquid separation. The separated solid component is dehydrated with a screw press to obtain ground fish meat having an oil content of <=about 2%. Since the ground meat thus obtained has low oil-content, a ground meat resistant to the progress of degradation can be obtained even from a red- meat fish such as sardine. |
