发明名称 STRAINED MISO
摘要 PURPOSE:To prepare fine-grained glutinous strained MISO (fermented bean paste) having high water content and similar to SAIKYO MISO (a kind of white MISO) in properties, from the MISO prepared from soybean, by centrifuging the raw MISO, and collecting the component having small particle size and high water content. CONSTITUTION:A completely aged MISO prepared from malt and steamed soybean is put into a container made of a stainless steel net having a mesh size of <=0.8mm., and centrifuged by a centrifugal separator. The MISO component having particle size of finer than the mesh size of the net is separated together with a considerable amount of water leaving coarse-grained non-glutinous MISO having low water content in the centrifugal separator. For example, the weight of the separated fine-grained MISO and water was 70% of the charged raw MISO. By this process, fine-grained MISO having high water content can be separated from normal-grade MISO, and a glutinous product similar to a high- grade SAIKYO MISO can be obtained. Furthermore, the MISO left in the separator can be used satisfactorily for cooking, etc. since the properties of MISO are kept unchanged.
