PURPOSE:To prepare a lobster fleshlike paste product having a good firm flesh and springy resilience, by using a boiled fish paste and ground fish meat as raw materials. CONSTITUTION:A finely divided heat coagulated fish paste product, e.g. cut boiled fish paste or crushed boiled fish paste, and ground fish meat are mixed at (5:5)-(9:1), preferably about (6:4)-(8:2), weight ratio under about 500-760mm.Hg reduced pressure, stirred and molded into a desired shape. The molded material is then heat-treated with steam at 90 deg.C for about 15min. |
