PURPOSE:To prepare a pickled salmon with salmon roe having a rich taste or new falvor, by pickling a salmon, salmon roe and MEFUN (salted kidney of a salmon) in a soy sauce seasoned with sweet SAKE, SAKE, dried bonito, sea tangle, etc., and maturing the pickled salmon, salmon roe and MEFUN. CONSTITUTION:A mixture of 6 GOs (one GO is about 0.18l) soy sauce, 1.5 GOs sweet SAKE, 1.5 GOs SAKE, 50g dried bonito, 70g sea tangle and a small amount of sodium glutamate is boiled and cooled to prepare a seasoned soy sacue. A salmon is divided laterally along the backbone, and bones are removed. The upper and lower slices are bled and dried in a dryer at 20-30 deg.C for about 8hr, cooled, pickled in the above-mentioned seasoned soy sauce and matured in a refrigerator at 0-5 deg.C for about a half year. A MEFUN (salted kidney of a salmon) is dipped in water, desalted, drained, pickled in the above-mentioned seasoned soy sauce, and matured in the same way as described above. The salmon roe is then added to the above-mentioned salmon meat and MEFUN, packed together in a container and matured for about 3 days to give the aimed product. The salmon meat, salmon roe and MEFUN can be used for food fully alone, but the three kinds are together pickled in the seasoned soy sauce to produce a new flavor. |
