PURPOSE:In the titled composition containing fats and oils, starch, and, if necessary, a binder, seasoning, spiece, swelling agent, improving material, etc., an ingredient obtained by sprinkling starch, etc. on capsules of fats and oils gelatin and drying it is used as the whole or part of the fats and oils. CONSTITUTION:Capsules of fats and oils gelatin is prepared by combined coacervation method wherein gum arabic or gelatin-based substance is heated to a proper temperature, pH is adjusted with an acid, and, if necessary, an anti- foaming agent is added to the substance, it is blended with liquid fats and oils to form fats and oils/coacervate droplets, the original form of the microcapsules, etc. The fats and oils gelatin is sprinkled with starch and/or grain powder, dried, and used. The gelatin capsules are used as the whole or part of the fats and oils. The ratio of the fats and oils in the composition is 5-70wt% and, if necessary, the fats and oils contain one or more of a binder, seasoning, spice, swelling agent, and improving material. |
