The biological material is, for example, picked grapes. The method is characterised essentially in that use is made of the ability of the parasite to generate, by changing the sanitary condition of the material, an oxydase employed as a tracer of the sanitary condition and capable of fixing oxygen on a suitable reactant, in that a sample of the said material is placed in contact with a measured quantity of the said reactant and in that after reaction the presence or the absence of the said oxydase and hence the sanitary state of the material is determined by measuring the quantity of oxygen consumed per unit time and unit volume. Application: measurement of an oxydase activity on biological materials, for example on picked grapes, to determine the attack by Botrytis cinerea or grey rot, the oxydase being laccase in this case. <IMAGE>
