In the process for the production of low-mineral cheese having a minimum moisture content of 39 %, milk is centrifuged, the separated fraction enriched with cells is sterilised, sterilised bactofugate is combined with the aseptic fraction, and cheese is produced therefrom, the brine treatment being of a type such that the mean salt content in the dry cheese is at most 3.0 %, preferably 0.5 to 2.5 %.
