PURPOSE:To preserve brown algae without causing fading of their own color and not to damage the taste and the flavor at all even for a long-period storage, by boiling the brown algae, subjecting them to vacuum packaging, preserving them in a frozen state at <=-10 deg.C. CONSTITUTION:Brown algae such as Wakame seaweed are boiled, and subjected to vacuum packaging. Red algae such as Amanori (laver) are directly subjected to vacuum packaging or treated with an alkali substance and subjected to vacuum packaging. They are frozen and stored at <=-10 deg.C, preferably at <=-18 deg.C in an air evacuated state. Consequently, even if the preservation period spreads over about one two years, not only the color but also the taste and the flavor before freezing are not damaged at all when they are thawed. |
