PURPOSE:To carry out continuous heating of soybean in a short time without degrading its quality, and to enable the deactivation of enzyme, by using a heating vessel having particular structure in combination with a hot-water tank to supply hot water to the heating vessel and keep the water level in the vessel. CONSTITUTION:The shaft 8 is furnished with a number of steam ejection nozzles 9 and a screw blade 7, which is placed close to the inner wall of the inclined cylindrical heating vessel 1. Hot water is fed to the heating vessel 1 and the water level in the vessel is maintained by the hot-water tank 2. Soybeans can be heated uniformly in a short time without degrading the quality, and lipoxidase enzyme can be deactivated by the use of the above structure. Since the apparatus is not batch-system, it can treat a large amount of soybeans continously, and since it is sealed completely, the treatment can be carried out without contacting with air, and the bacterial contamination and oxidation can be prevented. Accordingly, high-quality soya milk free of soya smell can be prepared continuously in a large amount. |
