<p>Cyclodextrins are used to stabilize unsaturated fatty acid amides, aldehydes or ketones (I) in an atmosphere with a relative humidity of less than 30%. Independent claims are also included for: (1) stabilizing (I) by mixing (I) with a cyclodextrin and a solvent, removing the solvent, recovering the resulting solid and, in an atmosphere with a relative humidity of less than 30%, either further processing the product or storing it in a sealed container; (2) sealed container containing a product produced as above, in which the relative humodity is less than 30%.
