PURPOSE:To make it possible to show excellent emulsification capacity with respect to an oil phase, by containing a high molecular substance obtained by esterifying the carboxyl group of natural polysaccharide with propylene glycol, polyhydric alcohol and an oil phase component. CONSTITUTION:One kind or more high molecular substance obtained by esterifying the carboxyl group of natural polysaccharide having the carboxyl group in the molecule thereof with propylene glycol, water soluble alcohol having two or more hydroxyl groups (e.g., ethylene glycol) and an oil phase component (e.g., tallow) are contained to form an emulsifier composition. The used ratio of propylene glycol ester and water soluble alcohol is pref. within a range of 1:2- 1,000 by weight. Because the obtained emulsifier composition is uniform and a transparent or a translucent gel or a viscous liquid, it can be directly and suitably used in all fields such as food, cosmetics or feedstuff for example, as a sun-care jelly, a beauty liquid, edible jelly, medical jelly or a lubricant. |
