In order to match the shape of mechanically produced Swabian spätzle virtually completely to the ideal shape of spätzle scraped by hand from a board, the spätzle dough is no longer forced through uniform round holes, as was previously customary, but through differently shaped elongate, square, notched, round and similar openings. The shape and number of the openings are governed by the shape and variety of hand-made spätzle. The novel perforated plate can be used as a spätzle press, a spätzle scraper, a spätzle mill or in another technical form.
