摘要 <p>PURPOSE:To prepare a sweet SAKE used in the four-stage charging for refined SAKE at a relatively low temperture without the contamination with various germs, by adding a specific amount of ethyl alcohol to a charging water in using a crushed gelatinized rice or gelatinized rice flour as a raw material. CONSTITUTION:A crushed gelatinized rice or gelatinized rice flour is used as a raw material, and an aqueous solution of starch liquefying enzymes containing 3-20(V/V)% ehtyl alcohol and ethanol as a preservative are added to liquefy the raw material at 30 deg.C. The powdery starchy material has a high water absorption rate, and the aimed sweet SAKE used in the four-stage charging for refined SAKE can be prepared at a relatively low temperature in a short time.</p>
