PURPOSE:To prepare instant gruel having excellent taste and flavor, easily, by sealing up rice containing about 10-40% alpha-starch together with water or seasoning liquid within a heat-resistant vessel, and heating the vessel. CONSTITUTION:Rice is washed with water, drained, and if necessary, heated to attain the alpha-starch content of 10-40%, and put into a heat-resistant vessel. The vessel is sealed, and heated to attain the alpha-starch content of >=90%. An easily digestible gruel can be prepared by this process. |
