PURPOSE:To prepare a sweetening matter having good sweetness, by treating triterpene alcohol beta-glycoside with an alpha-glycosyl transferase so that it is converted into an alpha-glycosyl derivative. CONSTITUTION:An aqueous solution comprising triterpene alcohol beta-glycoside shown by the formula (one or both of R1 and R2 are beta-D-glucose residue) obtained from Momordica grosvenori Swingle of a cucurbitaceous plant and an alpha-glycosyl saccharide compound, e.g., partial hydrolyzate of starch or sugar is treated with an alpha-glycosyl transferase, e.g., alpha-glycosidase, alpha-amylase, dextran sucrase, etc. to give a sweetening matter containing an alpha-glycosyl derivative of triterpene alcohol beta-glycoside. The enzyme is deactivated and used as a sweetener. |
