METHOD FOR CONVERTING GINSENOSIDES TO GINSENOSIDE F2

A method for converting a ginsenoside of ginseng or red ginseng into a ginsenoside F2 is provided to improve the yield of the ginsenoside F2 and save the manufacturing cost. A ginsenoside F2 is converted by contacting an Aspergillus oryzae or Trichoderma viride; medium of Aspergillus oryzae or Trichoderma viride; or crude medium solution of Aspergillus oryzae or Trichoderma viride with a ginsenoside. The ginsenoside is contained in powder or extract of ginseng or red ginseng. The converting condition is pH 4.0-6.0 and 40-60°C of temperature.
