PURPOSE:To prepare boiled heat sterilized beans, e.g. AZUKI or cowpeas, without broken epidermises, by using dextrin as an external solute of the beans. CONSTITUTION:Beans, e.g. AZUKI beans or cowpeas, are dipped in water, boiled and separated into beans and a soup. The beans are directly or coated with dextrin and packed in a can or bottle. On the other hand, a small amount of common salt and dextrin in an amount corresponding to a concentration of about 20% are added to the soup and dissolved under heating to give a pouring solution. The resultant pouring solution is then poured into the can or bottle, deaerated, sealed and sterilized under heating. |
