PURPOSE:To prepare the TEMPURA (Japanese deep-fat fried food) of lotus root stuffed with mustard (KARASHI-RENKON), having improved preservability, without degrading the taste and flavor of KARASHI-RENKON, and having additional deliciousness of the fish paste product, by wrapping KARSHI-RENKON with the raw material of fish paste, and frying the product in oil. CONSTITUTION:A harvested lotus root is washed with water, parboiled and cooled. A mixture of mustard and MISO (fermented bean paste), e.g. obtained by kneading 3pts. of mustard and 7pts. of MISO is stuffed into the channels of the lotus root completely, and left to stand for a night. The root stuffed with mustard mixture is cut in round slices or cut lengthwise leaving at least one channel, wrapped wholy with a raw material of fish paste product such as paste of walleye pollack, etc., and fried in oil. |
