A photostable anthocyanic colorant composition, e.g. food composition, is provided comprising an anthocyanic pigment in combination with a photoprotective agent selected from the group consisting of sulfonated polyhydroxyflavonols, poly(hydroxyalkyl) flavonols, sulfonated polyhydroxyflavones, sulfonated polyhydroxyiso-flavones, and sulfonated aurones. The composition is produced by combining the components in a manner known per se. |
