Processing of shellfish is described. Thus 38L boiling shellfish juice (soled:4.6%, crude protein:0.35%, edible NaCl:3.05%) was filtered and dialyzed for 180 min. 38L filtered juice was placed in desalt position, and 40L 2.31% edible NaCl was placed at conc. position. 40L of 1.95% NaCl was used for electrode soln,; temp. was 31˜40≦̸C electric current was 7.5˜7.8˜3.5A; and and voltage between the poles was 15.5˜18.8 v. Total electric supply was counted to 19.0 AH. After dialysis, 34.5L boiling shellfish juice was obtained solid was 1.25%, and desalting rate was 96.4%. |
