摘要 Bard is prepd. by (a) grinding and then mixing fat with an alginate, and (b) adding CaSO4 to the homogeneous mixing and moulding the mixt. Pref. a chelating agent for Ca ions is added simultaneously with the alginate, pref. being pyrophosphoric acid. Amts. added are 0.5-5 wt.% each of the alginate and CaSO4. Collagen is pref. added to the fat during grinding, pref. being bacon rind in amt. of up to 10 wt.% of the whole mixt. For partly encircling meat or fowls for roating. Addition of an alginate results in mouldable gel giving a reconstituted bard which is not thermoreversible.
