PURPOSE:Raw SHIITAKEs are salted directly to give pickled products with high nutrition and good storability, being suitable for use in instant food as well. CONSTITUTION:Raw SHIITAKEs are directly salted. After the salt uniformly penetrates into them, they are pickled in MISO (soybean paste), vineger, SAKE lees or the like alone or along with other ingredients to be pickled. |
