<p>The dough-knife is designed for use on bread loaves during prepn. for the oven, and comprises a blade (15) sandwiched between two metal plates (1, 2). An axle screw (3) passes through central holes in both the top plate (2) and the blade and also through a slot hole in the bottom plate, receiving a nut (4), and allowing the blade to slide or rotate through 360 degrees. The projection or the angle of the blade can be adjusted, parts of the cutting edges of a demountable double edged razor blade can be used in rotation, and the major part of the blade is covered by the plates. A small stem appended to the bottom plate is designed to facilitate accurate work and may be replaced by a thicker longer stem designed for coarse work.</p> |
